It's a type of condensation reaction in which a water molecule is produced by the reaction between 2 organic molecules. Maybe it's sorta like water falling from the sky, rain. Rain is a condensation of liquid water from water vapor. Of course the precipitation of water in a rain storm is physical phase change not a chemical reaction, but zillions of rain drop falling from the sky may help with visualizing this type of chemical reaction.
