It is a singular noun, but it has a collective meaning. Seed can be singular or plural. It is singular in the sense of apple seed or individual seed, or it can talk about all the descendants of somebody meaning the descendants of Abraham. Here Paul makes a point out of the fact that the word Seed is singular, and so the promise is to a Seed singular.
