What: The molecule itself itself is very hydrophobic. It "hates" water and will not dissolve with it. Most of the human body is water, so to be functional cholesterol has to be encapsulated in micelles which are to some extent like little globules of peanut butter floating around your blood stream with a coating of jelly. These encapsulations are the lipo-proteins. These little balls of lipid help aggregate and transport the cholesterol in a water environment. With lipo-proteins, the cholesterol is given a water soluble coat that helps transport them AND depending on the protein associated with them, they are either transported to the liver or away from the liver.
