What: "The rolled spleen is like a richly flavoured piece of ham, offset with cornichons and a lovely piquant dressing. The terrine of heart, liver and other bits and pieces is appealingly mild and delicate in flavour. But my favourites are the dried salted pig's liver with egg and radishes, and the warm salad of pig's head, trotter and broad beans. Mind-blowingly tasty."
