What: Fibroblasts, for instance, make up the "mattress" of the skin and help generate the collagen that keeps young skin thick and supple. As we age, however, those same cells grow sluggish. "Fibroblasts are like French workers on strike," explains Dr. Georges Roman, a French plastic surgeon who practices in London. "They spend most of the time doing nothing, but if you give them a reason, they'll get back to work."
